Stones sometimes are dropped in the form of shiny sparkly items on the ground. You need to look for them in different places. You need to go to the Tagtree Thicket where you need to look for Leaf Stone near the Trees. They will spawn randomly, there is no specific place. Just look around and whenever you see a sparkly item get them.
2. Sunflora Hide and Seek Reward
Sunflower Hide and Seek is a GYM challenge that you will complete. In this challenge, you need to find the 10 Sunflowers located in different areas. These locations will be near the challenge area. After finding Sunflower report back to the NPC standing there.
You can rerun the challenge after beating Katy which will give you Cortondo Gym Badge. This will allow you to renter the challenge upon completion you will get Leaf Stone as a reward.
3. Delibird Presents Shop
This is the easiest way to get the Leaf Stone. You can get the Leaf Stone from Delibird Present Shop. There are different shops in different locations of Paldea Region where you can check for Leaf Stone. You can check Mesagoza, Levincia, and Cascarrafa for Leaf Stone.
But there is a twist you need to first get three GYM Badges. For that, you need to compete with three Gym Leaders and complete Gym challenges which will unlock Leaf Stone. You can then check the shops for the availability of stone.
